A dual purpose breed, once the most popular conventional breed in America, the Delaware is now endangered. With its slow growth to a mammoth 11 lbs live weight in 20 weeks, and more reasonable 8 lbs at 16 weeks, the Delaware is a more economical heritage chicken than the Bresse. Bred on farm and raised to 16 weeks on organic grain, and finished on organic pasture with a rotating alternative feed regiment, including wild harvested seaweeds, green crabs, organic whole grains and fresh milk. This depth of inputs leads to a complex flavor that is unparalleled.
