With a 500+ year French pedigree the American Bresse is a dual purpose breed that  sports a delicate bone structure as well as a marbled breast meat. Bred on farm and raised to 16 weeks on organic grain, and finished on organic pasture with a rotating alternative feed regiment, including wild harvested seaweeds, green crabs, whole grains and fresh milk. This depth of inputs leads to a complex flavor that is unparalleled by modern factory farmed chicken.
